Recipe: Pancake Obsession

As you all probably know yesterday was World Pancake Day, religiously known as Shrove Tuesday but in French, it is known as Mardi Gras – which literally translates to ‘Fat Tuesday’!

Those who follow me on Instagram probably saw the picture I posted yesterday of my own creation; and boy were those pancakes the fluffiest, mouth-watering concoctions I’ve ever made. I based my recipe loosely on the AllRecipe.com’s Fluffy Canadian Pancake recipe – though it is a good one – I found that with their recipe the pancakes tasted very eggy.

Ingredients
1 cup self raising flour (to give it that extra rise and oomph!)
1 cup whole milk (might as well go all out with the fat content right? if you’re going to do it, – do it right.)
1 tablespoon of baking powder (again for the rise)
1 large egg yolk or 2 medium egg yolk (using all three does not taste good!)
3 egg whites whisked to stiff peaks
1 teaspoon of vanilla essence (purely for sensory reasons, can take out if you want – but it just smells SO good)

+ fillings & toppings of your choice

Method
/ Measure and put self raising flour, milk, baking powder, vanilla essence and egg yolk(s) into a bowl. Mix until all the lumps are gone and you’re left with a smooth mixture.
/ Whisk the egg whites until they form a stiff peak and have a opaque white sheen (think making meringues but without the sugar).
/ Take a third of the whisked egg whites and fold them into you batter, being careful not to be heavy handed as you don’t want to lose the air pockets that you created – they add to the fluffiness of the pancakes. Once completely blended, fold in the rest of your egg whites until your batter has no streaks.
/ If you want to make stuffed pancakes, now is the time to add your fruits or nuts!
/ Lightly oil your frying pan with either butter or cooking oil over medium heat and make those pancakes!

I found that though the original recipe says that this makes about four servings, I found that it made about 12 mini pancakes – and because they’re quite thick and fluffy, they are extremely filling! + Obviously, top it up with your favourite maple syrup, fruits, nuts, whipped cream etc!

Tip: If you are making all pancakes in one go before you dig in, I would preheat the oven and place the pancakes in there as you are making them so that they remain warm when it comes to serving.
